Christmas Wreath Cookies
Hi Ruth. I finally got around to writing
out this recipe for you. These are always a big favorite
here at our house during the Christmas season. And they make a colorful
addition to any sweet tray. You can make the cookies 1-2 months ahead as they
freeze well. Going back about 12 years when I first started making these
cookies, several mystery “Cookie Monsters” found them in the freezer and they
ate them frozen! Ever since those early years, I make a few extras for tasting
and I mislabel the freezer container. That worked because these days I don't
have any cookies disappearing before the holidays! Enjoy making the wreath
cookies. I'm sure you'll put your own spin on decorating these quick, tasty

Preparation Time: 45 minutes
Baking Time: None
Servings: Approximately 5 dozen
Ingredients:
˝ cup lightly salted butter
30 large size marshmallows
1- 2 tablespoons green food coloring
1 ˝ teaspoons pure vanilla extract
4 cups of corn flake cereal
Red cinnamon candies, or other festive
candy decorations
Method:
In a 2 quart saucepan melt butter and
marshmallows over moderate low heat, stirring constantly.
When melted, remove from heat and add 1-2
tablespoons of food coloring and vanilla, stirring until the coloring is
evenly mixed through.
Stir in the corn flakes being careful not
to break them up too much yet getting them thoroughly covered in marshmallow.
Drop mixture unto was paper 1 tablespoon
at a time.
Decorate with candy hearts or other
Christmas theme candy.
Let stand 30 minutes until cool.
Notes:
1. You'll see that the recipe
calls for 1-2 tablespoons of coloring. It is a lot but you'll need this amount
to get a good green color
for the wreaths.
2. If the marshmallow mixture
starts to cool too much while you are blending in the food coloring, put is
back on the stove on low heat until it is heated through. Freeze on trays then
transfer frozen wreaths to plastic
containers.
3. Place sheets of waxed paper
between layers to keep wreaths from sticking to each other. Place cookies,
straight from the freezer,
on to serving plates – no need to defrost (remember,
the Cookie Monsters ate them straight out of the freezer containers!
